As a chemical engineer of a food processing plant, you are asked to conduct material balances for a process where oranges are the feed and the final product is 40 kg/hr. of powder of orange juice. PROJECT: First, it is assumed that oranges contain in average 75% wt. of water, 10% of solids and the remaining are aroma substances and the weight of one orange is about 120 grams.

(1) Process Unit 1: From the filtration process, it is summed that only 90% of water and 85% of aroma of the oranges can be extracted as liquid from oranges. The rest is in the solid waste from oranges.

(2) Process Unit 2: In the evaporator, the dilute orange juice is now concentrated to contain only 25% water, the remaining being aroma substances. It is also assumed that 5% of the aroma of the feed has been wasted with the water vapor stream leaving the evaporator.

(3) Process Unit 3: The final step is a drying process where the dehydrated orange juice contains only 2% wt. of moisture and the remaining is aroma substances. It is also assumed that 3% of the aroma of the feed has been wasted with the water vapor stream leaving the dryer.
