Oaxaca whose official name is the Free and Sovereign State of Oaxaca has a variety foods and drinks you may try. Tejale a pre-Spanish  cacao drink you can find all over the state made from toasted maize, fermented cacao beans and cacao flower. This drink is served cold and has pasty topping formed by the cacao flower.
