The fresh fruit contains 12% soluble solids and the rest water. After mixing, the solution enters an evaporator where some of the water is removed. The final product should contain 68% total solids and 20% sugar. Here total solids include sugar, pectin, citric acid and the soluble solids from the fruit. Required:
Calculate the amount of water thatneeds to be removed from in the evaporator and the amount of sugar that needs to be added.
