Depending on the source, fresh orange juice (OJ) contains about 10 to 13 wt% solids (pulps) and the balance is mostly water. Concentrated OJ may contain 40 to 50 wt% solids. In an OJ Processing Plant, initially a single evaporation process was used for the concentration, but volatile constituents (mostly flavonoids) of the OJ escaped with the water vapor, leaving concentrate with a flat taste. Current process overcomes this problem by bypassing the evaporator with a fraction of the fresh OJ. The juice that enters the evaporator is concentrated to 60 wt% solids and the evaporation product is then mixed with the bypassed fresh OJ to achieve the desired final concentration. (a) Draw and label a flowchart of the process, neglecting evaporation of everything in the juice but water. Assume that your fresh OJ has 12 wt% solid contents. (b) For a OJ Plant processing 1000 kg/day fresh OJ, determine the marketable processed OJ product (45 wt% concentrate) and fraction of the feed that bypassed the evaporator.
