If you have the option of working. with an open flame or a hot plate, which should tou choose? why?

Hot Plate is the safer choice.

While open flame can be cheaper (as fuel is less expensive then heating a large piece of metal), an open flame can go out of control, and burn down a building, as well as give people burns if they come into contact with it. Hot plates, on the other hand, can at most give people burns when they come in contact with it.
