Case Study #1 – The Thanksgiving Relish Tray You have been asked to cut up carrots and celery to put on your Thanksgiving relish tray. You don’t want to be working right before dinner is served. You plan to cut them up ahead of time so that you can visit with friends and family. You were told by the expert cooks in your family to cut them up and put them in a bowl of ice water until it’s time to put them on the table. You are not to simply put them on the plate and put them in the refrigerator. Thinking about water movement across a cell membrane, answer the questions below. Be specific!

[2.1] What will happen to your carrot and celery sticks if they are sitting on the open plate?

[2.2] Explain what is happening to the cells in the carrot or celery sticks as they sit on the open plate?

[2.3] You have some carrots in your fridge that have been there a little too long. They are limp. As produce is expensive, and they are not moldy, is there anything you can do to revive them to a more edible condition? Explain!
