Vegetables are edible part of the plant. It is largely consumed by different animals. These are highly rich portions of plants with starch. The difference between the fruit and vegetable is that fruit is ovary portion and other edible parts of plant are categorized as vegetables(roots, edible photosynthetic parts).

Eating vegetables provides many health benefits to our body. It reduces the chances of chronic diseases. Chronic diseases are those disesases which are long lasting such as cancer, heart diseases, diabetes etc.
No Fats and Cholestrol The vegetables do not have animal fat and cholestrol which makes them great for consumption who have heart diseases or which are recommended to have low fats diet by the doctor. Cholestrol adds into the lump of LDL(low density lipoproteins) inside the blood vessels which cause the blockade of the vessel causing heart diseases. Vitamins Since the plants absorb nutrients and ions from the soil so they are really rich in Vitamins. Dietary fiber  helps reduce blood cholesterol levels and may lower risk of heart disease. Fiber is important for proper bowel function. It helps reduce constipation and diverticulosis. Fiber-containing foods such as vegetables help provide a feeling of fullness with fewer calories.
Folate (folic acid) helps the body form red blood cells. In Pregnant women, this reduces the risk of neural tube defects, spina bifida, and anencephaly during fetal development.
Vitamin A keeps eyes and skin healthy and helps to protect against infections.
