What happens when a membrane contains a substantial amount of lipids that have chemical features that make them prone to forming more ordered structures (i. e., have saturated alkyl chains, such as sphingolipids, or are planar, such as cholesterol), even though it also contains other phospholipids with more fluidity (such as phosphoglycerolipids with unsaturated fatty acyl chains)?
